Learn how to make the best air fryer baked potato with crispy skin and a perfectly fluffy center. This fast method is ideal for quick weeknight potato side dishes or loaded comfort food.

Ingredients

Scale
  • 4 medium Russet potatoes
  • 1 tablespoon olive oil
  • 1 teaspoon coarse salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder (optional)

Instructions

  1. Scrub the potatoes well under running water to remove any dirt. Dry them completely with a paper towel; moisture prevents crispy skin.
  2. Use a fork to pierce each potato deeply about 6 to 8 times all over. This lets steam escape.
  3. In a small bowl, mix the olive oil, coarse salt, pepper, and garlic powder, if using.
  4. Rub the oil mixture evenly over the entire surface of each potato. Make sure the salt adheres well to the skin.
  5. Preheat your air fryer to 400°F (200°C).
  6. Place the seasoned potatoes in the air fryer basket in a single layer. Do not overcrowd the basket; cook in batches if necessary for the best results.
  7. Air fry for 30 to 35 minutes. Halfway through the cooking time (around 15 minutes), carefully flip the potatoes over using tongs.
  8. Check for doneness by piercing a potato with a fork or knife; it should slide in easily. If it resists, return it to the air fryer for another 3 to 5 minutes.
  9. Remove the potatoes from the air fryer. Immediately slice them open lengthwise down the middle and gently squeeze the sides to fluff up the interior.
  10. Serve immediately with your favorite toppings.

Notes

  • For the absolute crispiest skin, some cooks lightly brush the potatoes with a little extra oil right after they come out of the air fryer before slicing.
  • Russet potatoes are best for this recipe because their high starch content yields the fluffiest interior.
  • This fast method is great for busy weeknights, but these potatoes also make a fantastic, oven-free side dish for holiday gatherings.
  • To make loaded baked potatoes air fryer style, slice the cooked potato open, fluff the inside, add butter, cheese, and bacon bits, and return to the air fryer for 1-2 minutes until the cheese melts.
