Make crispy, golden-brown zucchini spears in your air fryer using a simple parmesan crust. This recipe delivers a crunchy texture perfect for a quick side dish or appetizer.

Ingredients

Scale
  • 2 medium zucchini
  • 1 large egg
  • 1 tablespoon water
  • 1/2 cup all-purpose flour
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup grated Parmesan cheese
  • 1/4 cup panko breadcrumbs (optional, for extra crunch)
  • Cooking spray

Instructions

  1. Wash and trim the ends of the zucchini. Cut each zucchini lengthwise into 8 spears, similar in size to thick fries.
  2. Set up a standard breading station with three shallow dishes. In the first dish, whisk the egg and water together.
  3. In the second dish, combine the flour, salt, and pepper.
  4. In the third dish, mix the grated Parmesan cheese and panko breadcrumbs, if using.
  5. Dredge each zucchini spear first in the flour mixture, shaking off excess.
  6. Dip the floured spear into the egg wash, letting excess drip off.
  7. Press the spear firmly into the Parmesan mixture to coat all sides completely.
  8. Lightly spray the bottom of the air fryer basket with cooking spray. Arrange the coated zucchini spears in a single layer, ensuring they do not overlap. Work in batches if necessary.
  9. Lightly spray the tops of the coated spears with cooking spray.
  10. Air fry at 380°F (195°C) for 10 to 12 minutes, flipping the spears halfway through the cooking time. Cook until the crust is golden brown and crispy.
  11. Serve immediately.

Notes

  • For best results and maximum crispiness, avoid overcrowding the air fryer basket. Cook in batches if needed.
  • If the coating seems too loose, press it onto the zucchini firmly after the egg wash step.
  • Serve with a side of ranch dressing or marinara sauce for dipping.
