Ingredients
Scale
1 lb ground turkey
1 tablespoon olive oil
1 packet (1 ounce) low sodium taco seasoning mix
1/2 cup water
2 cups cooked white or brown rice
4 cups shredded romaine lettuce
1 cup shredded cheddar or Monterey Jack cheese
1 cup salsa
1/2 cup sour cream or plain Greek yogurt
1/4 cup chopped fresh cilantro
Optional: 1/2 cup black beans, rinsed and drained
Instructions
Place the ground turkey in a medium skillet over medium heat. Cook, breaking it apart with a spoon, until browned, about 6 to 8 minutes. Drain any excess fat.
Stir the taco seasoning and water into the cooked turkey. Simmer for 2 minutes until the sauce thickens slightly.
Transfer the seasoned ground turkey mixture to the air fryer basket in a single layer if possible, or in two batches if necessary.
Air fry the turkey at 380 degrees Fahrenheit for 5 minutes to crisp the edges. Shake the basket halfway through cooking.
While the turkey crisps, prepare your bowls. Divide the cooked rice among four serving bowls.
Top the rice with shredded lettuce.
Spoon the crispy taco turkey mixture over the lettuce in each bowl.
Add your desired toppings: cheese, salsa, sour cream, and cilantro. Serve immediately.
Notes
If you are making a large batch, cook the turkey in the skillet first, then crisp it in the air fryer in batches to maintain crispness.
For lower carbohydrates, substitute the rice with cauliflower rice or extra lettuce.
You can pre-cook the rice and assemble the cold components ahead of time for fast assembly later.
