Ingredients

Scale
  • 2 ears of corn, husked and silk removed
  • 1 tablespoon olive oil
  • 1/4 cup mayonnaise
  • 2 tablespoons cotija cheese, crumbled
  • 1 tablespoon chopped fresh cilantro
  • 1 teaspoon chili powder
  • 1/2 teaspoon lime zest
  • Salt to taste
  • Lime wedges, for serving

Instructions

  1. Preheat your air fryer to 375°F (190°C).
  2. Rub the corn ears with olive oil.
  3. Place the corn in the air fryer basket in a single layer.
  4. Air fry for 10-12 minutes, turning halfway through, until the corn is tender and slightly charred.
  5. In a small bowl, mix together mayonnaise, cotija cheese, cilantro, chili powder, and lime zest.
  6. Carefully brush the mayonnaise mixture over the hot corn.
  7. Return the corn to the air fryer for 2-3 minutes, or until the topping is heated through and slightly browned.
  8. Season with salt to taste and serve immediately with lime wedges.

Notes

  • For spicier corn, add a pinch of cayenne pepper to the topping mixture.
  • If you don’t have cotija cheese, you can substitute with crumbled feta cheese.
  • Ensure the corn is dry before applying the oil for better crisping.
