You will achieve perfectly crispy air fryer potato wedges with fluffy interiors using this simple method. These seasoned wedges are a healthier alternative to deep-fried versions and cook fast, making them an easy side dish or snack for any meal.

Ingredients

Scale
  • 4 large Russet potatoes
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Optional: 1/4 cup grated Parmesan cheese (for topping after cooking)

Instructions

  1. Wash and dry the Russet potatoes completely. You do not need to peel them.
  2. Cut each potato lengthwise into 8 equal wedges.
  3. Place the potato wedges in a large bowl. If you want extra crispness, soak the wedges in cold water for 30 minutes, then drain and pat them completely dry with paper towels. This step removes excess starch.
  4. In the bowl, toss the dry potato wedges with the olive oil until lightly coated.
  5. In a small separate bowl, mix together the garlic powder, onion powder, smoked paprika, dried oregano, salt, and black pepper to create your seasoning blend.
  6. Sprinkle the seasoning mix over the oiled wedges and toss well until every wedge is evenly coated.
  7. Preheat your air fryer to 400°F (200°C) for 5 minutes.
  8. Place the seasoned wedges in the air fryer basket in a single layer, working in batches if necessary. Do not overcrowd the basket; this is key for crispiness.
  9. Air fry for 16 to 20 minutes, shaking the basket vigorously every 5 minutes to ensure even browning.
  10. The wedges are done when they are golden brown and crispy on the outside and tender when pierced with a fork.
  11. If using, immediately toss the hot wedges with the grated Parmesan cheese. Serve your restaurant style potato wedges right away.

Notes

  • For the best results when making crispy potato wedges in the air fryer, make sure the potatoes are completely dry before tossing them with oil and seasoning.
  • If you prefer a spicy kick, add 1/4 teaspoon of cayenne pepper to your spice blend.
  • If you want a quick air fryer side dish that tastes like garlic parmesan potato wedges, add the cheese only after the cooking time is complete.
