Ingredients
Scale
2 medium zucchini
1 large egg, lightly beaten
1/2 cup panko breadcrumbs
1/4 cup grated Parmesan cheese
1 teaspoon garlic powder
1/2 teaspoon dried oregano
1/4 teaspoon salt
1/8 teaspoon black pepper
Cooking spray
Instructions
Wash and trim the ends of the zucchini. Cut the zucchini into 1-inch thick rounds or half-moon shapes.
In a shallow bowl, whisk the egg. In a second shallow bowl, combine the panko breadcrumbs, Parmesan cheese, garlic powder, oregano, salt, and pepper.
Dip each zucchini piece first into the egg, letting excess drip off.
Dredge the egg-coated zucchini piece thoroughly in the breadcrumb mixture, pressing lightly to adhere the coating.
Preheat your air fryer to 380°F (195°C).
Lightly spray the air fryer basket with cooking spray. Arrange the coated zucchini bites in a single layer in the basket, avoiding overcrowding. Work in batches if necessary.
Spray the tops of the zucchini bites lightly with cooking spray.
Air fry for 8 to 10 minutes, flipping the bites halfway through the cooking time, until they are golden brown and crisp.
Serve immediately.
Notes
For an air fryer gluten-free version, substitute regular panko with gluten-free breadcrumbs or almond flour.
If you prefer a softer interior, reduce the cooking time by 1 minute.
You can serve these bites with a side of marinara sauce or ranch dressing for dipping.
