This recipe delivers the classic, creamy, sweet, and tangy Amish Macaroni Salad perfect for potlucks, picnics, and summer gatherings.

Ingredients

Scale
  • 1 pound elbow macaroni
  • 1 cup celery, finely chopped
  • 1 cup sweet onion, finely chopped
  • 2 cups sweet pickle relish
  • 1 cup shredded carrots (optional)
  • 6 hard-boiled eggs, chopped
  • For the Dressing:
  • 2 cups mayonnaise
  • 1 cup granulated sugar
  • 1/2 cup apple cider vinegar
  • 1/4 cup yellow mustard
  • 1 tablespoon celery seed
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Cook the elbow macaroni according to package directions until al dente. Drain well and rinse immediately with cold water to stop the cooking process. Set aside.
  2. In a large bowl, combine the cooled macaroni, chopped celery, chopped onion, sweet pickle relish, shredded carrots (if using), and chopped hard-boiled eggs. Mix gently.
  3. In a separate medium bowl, whisk together all the dressing ingredients: mayonnaise, sugar, apple cider vinegar, yellow mustard, celery seed, salt, and pepper until smooth.
  4. Pour the dressing over the macaroni mixture. Fold everything together carefully until the pasta and vegetables are evenly coated.
  5. Cover the salad and refrigerate for at least 4 hours, or preferably overnight, to allow the flavors to meld. Stir gently before serving.

Notes

  • For the best flavor, make this salad the day before serving.
  • You can adjust the sugar and vinegar slightly to match your preferred level of sweetness and tang.
  • Use high-quality mayonnaise for the creamiest texture.
