Wake up to the cozy flavor of apple pie with this easy, no-bake Apple Cinnamon Overnight Oats recipe. It is perfect for meal prepping healthy breakfasts that keep you full all morning.

Ingredients

Scale
  • 1 cup rolled oats
  • 1 cup milk (dairy or non-dairy like almond or soy)
  • 1 tablespoon chia seeds
  • 1/2 cup finely diced apple (about 1 small apple)
  • 1 tablespoon maple syrup or honey (adjust to taste)
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. In a jar or container with a lid, combine the rolled oats, chia seeds, ground cinnamon, and salt. Stir these dry ingredients together well.
  2. Add the milk, maple syrup, and vanilla extract to the jar. Mix everything thoroughly until the chia seeds and oats are fully submerged.
  3. Gently fold in the finely diced apple pieces.
  4. Seal the container and place it in the refrigerator for at least 4 hours, or preferably overnight.
  5. In the morning, check the consistency. If it is too thick, add a splash more milk. Taste and add more sweetener or cinnamon if desired.
  6. Serve cold directly from the jar. This is a great grab and go breakfast idea.

Notes

  • For a protein boost, stir in 1 scoop of vanilla or unflavored protein powder before chilling.
  • If you want a richer apple flavor, substitute 2 tablespoons of unsweetened applesauce for 2 tablespoons of the milk.
  • This recipe works well for meal prep and keeps fresh in the refrigerator for up to 3 days.
