Make simple, flavorful Asian-style meatballs using your slow cooker. This hands-off recipe yields tender meatballs coated in a sweet and savory sauce, perfect served over rice or as an appetizer.

Ingredients

Scale
  • 1.5 lbs ground beef or a mix of beef and pork
  • 1/2 cup panko breadcrumbs
  • 1/4 cup milk
  • 1 large egg, lightly beaten
  • 2 cloves garlic, minced
  • 1 teaspoon ground ginger
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup soy sauce
  • 1/2 cup brown sugar, packed
  • 1/4 cup rice vinegar
  • 2 tablespoons ketchup
  • 1 tablespoon sesame oil
  • 1 teaspoon sriracha (optional)
  • 1 tablespoon cornstarch mixed with 2 tablespoons cold water (slurry)

Instructions

  1. In a large bowl, combine the ground meat, panko breadcrumbs, milk, egg, minced garlic, ground ginger, salt, and pepper. Mix gently until just combined; do not overmix.
  2. Roll the mixture into uniform 1-inch meatballs. Place the raw meatballs directly into the basin of your slow cooker.
  3. In a separate bowl, whisk together the soy sauce, brown sugar, rice vinegar, ketchup, sesame oil, and sriracha, if using.
  4. Pour the sauce mixture evenly over the meatballs in the slow cooker.
  5. Cover the slow cooker and cook on LOW for 3 to 4 hours or on HIGH for 1.5 to 2 hours.
  6. About 30 minutes before serving, stir the cornstarch slurry into the sauce in the slow cooker. Stir gently to incorporate.
  7. Continue cooking on HIGH for the remaining 30 minutes, or until the sauce has thickened.
  8. Serve the meatballs hot, spooning extra sauce over them.

Notes

  • For firmer meatballs, you can brown them lightly in a skillet before adding them to the slow cooker, though this step is optional for convenience.
  • Garnish with sliced green onions or sesame seeds before serving.
  • If you prefer a thicker sauce, increase the cornstarch slurry amount slightly.
