Prepare a classic, refreshing Greek salad featuring fresh vegetables, salty feta, and a simple homemade vinaigrette. This recipe contains no lettuce.

Ingredients

Scale
  • 4 large ripe tomatoes, cut into wedges
  • 1 large English cucumber, sliced or chopped
  • 1 red onion, thinly sliced
  • 1 green bell pepper, seeded and sliced
  • 1 cup Kalamata olives, pitted
  • 8 ounces block feta cheese, cut into large cubes
  • 1/4 cup extra virgin olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon dried oregano
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon black pepper

Instructions

  1. Place the tomatoes, cucumber, red onion, green pepper, and olives into a large mixing bowl.
  2. Gently toss the vegetables together.
  3. In a small bowl, whisk together the olive oil, red wine vinegar, dried oregano, salt, and pepper to create the dressing.
  4. Pour the dressing over the vegetables and toss lightly to coat.
  5. Arrange the feta cheese cubes over the top of the salad. Do not toss the feta, as it may break apart.
  6. Serve immediately as a side dish or light meal.

Notes

  • For the most authentic flavor, use a block of feta cheese packed in brine, rather than pre-crumbled feta.
  • If you prefer a stronger oregano flavor, use 1 1/2 teaspoons of dried oregano.
  • This salad tastes best when served within 30 minutes of assembly.
