Ingredients

Scale
  • 6 large eggs
  • 1 ripe avocado, mashed
  • 2 tablespoons mayonnaise (full-fat, keto-friendly)
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon apple cider vinegar
  • Salt, to taste
  • Black pepper, to taste
  • Paprika, for garnish

Instructions

  1. Place eggs in a saucepan and cover with cold water. Bring water to a boil.
  2. Once boiling, remove from heat, cover, and let stand for 10 minutes.
  3. Immediately transfer eggs to an ice bath to cool completely.
  4. Peel the cooled eggs and slice them in half lengthwise. Gently scoop out the yolks and place them in a medium bowl.
  5. In the bowl with the yolks, add the mashed avocado, mayonnaise, Dijon mustard, and apple cider vinegar.
  6. Mash the mixture together until it is completely smooth and creamy. You want no lumps.
  7. Season the mixture with salt and pepper. Taste and adjust seasoning as needed.
  8. Spoon or pipe the avocado-yolk mixture back into the egg white halves.
  9. Garnish each deviled egg half with a light sprinkle of paprika.
  10. Chill for at least 15 minutes before serving for the best flavor.

Notes

  • For an extra kick, add a dash of hot sauce to the filling mixture.
  • If you prefer a silkier texture, you can use an electric mixer to blend the filling.
  • Make sure your avocado is perfectly ripe for the creamiest results.
