Ingredients

Scale
  • 1 pound elbow macaroni
  • 1/2 cup unsalted butter
  • 1/2 cup all-purpose flour
  • 3 cups milk
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon nutmeg
  • 4 cups shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 1 pound bacon, cooked and crumbled
  • 2 large eggs, beaten
  • 1 cup panko breadcrumbs
  • Vegetable oil, for frying

Instructions

  1. Cook macaroni according to package directions. Drain and set aside.
  2. In a large saucepan, melt butter over medium heat. Whisk in flour and cook for 1 minute.
  3. Gradually whisk in milk until smooth. Bring to a simmer, stirring constantly, until thickened, about 5-7 minutes.
  4. Remove from heat. Stir in salt, pepper, and nutmeg.
  5. Add cheddar and Monterey Jack cheeses, stirring until melted and smooth.
  6. Stir in the cooked macaroni and crumbled bacon.
  7. Transfer the mixture to a greased 9×13 inch baking dish. Spread evenly.
  8. Cover and refrigerate for at least 4 hours, or preferably overnight, until firm.
  9. Cut the mac and cheese mixture into 1-inch squares.
  10. Set up a breading station: one shallow dish with beaten eggs, and another shallow dish with panko breadcrumbs.
  11. Dip each mac and cheese square into the beaten eggs, then coat evenly with panko breadcrumbs.
  12. Heat about 2 inches of vegetable oil in a large skillet or Dutch oven to 350°F (175°C).
  13. Carefully fry the mac and cheese bites in batches, until golden brown and crispy, about 3-4 minutes per side.
  14. Remove with a slotted spoon and place on a wire rack lined with paper towels to drain.
  15. Serve warm.

Notes

  • For best results, ensure the mac and cheese mixture is very firm before cutting and frying.
  • You can make the mac and cheese mixture a day in advance.
