Ingredients

Scale
  • 2 cups rolled oats
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 2 cups milk (dairy or non-dairy)
  • 1/2 cup unsweetened applesauce or mashed banana
  • 1/4 cup maple syrup
  • 1 large egg, lightly beaten
  • 1 teaspoon vanilla extract
  • 1 cup mixed berries (fresh or frozen)
  • 1/2 cup sliced almonds

Instructions

  1. Preheat your oven to 375 degrees F (190 degrees C). Lightly grease an 8×8 inch baking dish.
  2. In a large bowl, whisk together the rolled oats, baking powder, salt, cinnamon, and nutmeg.
  3. In a separate bowl, mix the milk, applesauce, maple syrup, egg, and vanilla extract until well combined.
  4. Pour the wet ingredients into the dry ingredients. Stir gently until everything is just mixed. Do not overmix.
  5. Fold in the mixed berries.
  6. Pour the oatmeal mixture into your prepared baking dish.
  7. Sprinkle the sliced almonds evenly over the top. This creates your crunch!
  8. Bake for 35 to 40 minutes, or until the top is golden brown and the center is set.
  9. Let it cool for a few minutes before you cut and serve. Enjoy the warmth!

Notes

  • Feel free to substitute any berries you love, like blueberries or raspberries.
  • For an extra rich flavor, use whole milk.
  • If you prefer a softer topping, add half the almonds before baking and sprinkle the other half on for the last 10 minutes of cooking.
  • This reheats well in the microwave.
