Ingredients
Scale
2 medium zucchini
1 large egg
1 tablespoon water
1/2 cup all-purpose flour
1/4 teaspoon salt
1/4 teaspoon black pepper
1/2 cup grated Parmesan cheese
1/4 cup panko breadcrumbs (for extra crisp)
1 teaspoon garlic powder
Instructions
Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius). Line a large baking sheet with parchment paper.
Wash the zucchini and slice them into rounds about 1/4 inch thick. You can also cut them into sticks if you prefer.
Set up a dredging station. In one shallow bowl, whisk the egg and water together. In a second shallow bowl, mix the flour, salt, pepper, Parmesan cheese, panko breadcrumbs, and garlic powder.
Dip each zucchini round first into the egg wash, letting any excess drip off.
Next, press the zucchini firmly into the Parmesan mixture, coating both sides completely. Press the coating on to help it stick.
Place the coated zucchini rounds in a single layer on the prepared baking sheet. Do not let them touch.
Bake for 12 to 15 minutes, flipping halfway through, until the zucchini is tender and the coating is golden brown and crispy.
Serve immediately as a healthy appetizer or easy Parmesan side dish.
Notes
For the crispiest texture, pat the sliced zucchini dry with paper towels before you start coating them. This removes excess moisture.
If you want a low carb zucchini side, substitute the flour with almond flour and use only Parmesan cheese instead of adding panko breadcrumbs.
This recipe works well as an air fryer zucchini alternative; cook at 380 degrees Fahrenheit for 8-10 minutes, shaking the basket halfway through.
