Ingredients
Scale
1 pork tenderloin (about 1 to 1.5 pounds)
1 tablespoon olive oil
Salt and black pepper to taste
1/2 cup balsamic vinegar
2 tablespoons brown sugar
1 tablespoon Dijon mustard
1 clove garlic, minced
Instructions
Preheat your oven to 400°F (200°C).
Pat the pork tenderloin dry with paper towels. Season generously all over with salt and pepper.
Heat the olive oil in an oven-safe skillet over medium-high heat. Sear the pork for 2-3 minutes per side until nicely browned.
While the pork sears, whisk together the balsamic vinegar, brown sugar, Dijon mustard, and minced garlic in a small bowl.
Pour the balsamic mixture over the pork in the skillet.
Transfer the skillet to the preheated oven. Roast for 15-20 minutes, or until an instant-read thermometer inserted into the thickest part registers 145°F (63°C).
Remove the pork from the oven. Tent loosely with foil and let it rest for 5-10 minutes before slicing.
Pour the pan drippings and glaze from the skillet over the sliced pork before serving.
Notes
Let the pork rest after cooking; this keeps the juices inside.
You can substitute honey for brown sugar if you prefer.
Anya suggests adding a sprig of fresh rosemary to the pan while roasting for extra aroma.
