Ingredients
Scale
1 1/2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon ground cinnamon
1/2 cup (1 stick) unsalted butter, softened
3/4 cup packed light brown sugar
1 large egg
1 teaspoon vanilla extract
1 cup mashed ripe bananas (about 3 medium)
1/4 cup milk
1/2 cup packed light brown sugar (for filling)
2 tablespoons ground cinnamon (for filling)
1/4 cup (1/2 stick) unsalted butter, melted (for filling)
1/2 cup powdered sugar (for glaze)
2 tablespoons cream cheese, softened (for glaze)
1 teaspoon milk (for glaze)
Instructions
Preheat your oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan.
In a medium bowl, whisk together the flour, baking soda, salt, and 1 teaspoon of cinnamon. Set aside.
In a large bowl, cream together the 1/2 cup butter and 3/4 cup brown sugar until light and fluffy. Beat in the egg and vanilla extract.
Mix in the mashed bananas and 1/4 cup milk until just combined.
Gradually add the dry ingredients to the wet ingredients, mixing until you have a thick, slightly stiff batter, similar to thick cake batter. Do not overmix.
Prepare the filling: In a small bowl, mix the 1/2 cup brown sugar, 2 tablespoons cinnamon, and 1/4 cup melted butter until crumbly.
Spread half of the banana bread batter evenly into the prepared baking pan.
Sprinkle the entire cinnamon-sugar filling mixture evenly over the batter layer.
Gently spread the remaining half of the banana bread batter over the filling layer. Try to cover the filling completely.
Bake for 30 to 35 minutes, or until a toothpick inserted into the center comes out clean.
While the rolls bake, prepare the glaze: Whisk together the powdered sugar, softened cream cheese, and 1 teaspoon milk until smooth. Add more milk, 1/2 teaspoon at a time, to reach desired drizzling consistency.
Let the baked rolls cool in the pan for 10 minutes before drizzling the glaze over the top. Cut into squares and serve warm.
Notes
For a slightly firmer batter suitable for swirling, chill the mixed batter for 15 minutes before spreading.
If you prefer a less sweet glaze, reduce the powdered sugar by 1/4 cup.
You can add 1/2 cup chopped walnuts or pecans to the filling mixture for extra crunch.
