Make simple, creamy, and refreshing banana coconut popsicles at home using just a few ingredients.

Ingredients

Scale
  • 3 ripe bananas, peeled and sliced
  • 1 can (13.5 oz) full-fat coconut milk, chilled overnight
  • 2 tablespoons maple syrup (optional)
  • 1 teaspoon vanilla extract

Instructions

  1. Place the sliced bananas, the thick cream layer from the top of the chilled coconut milk can (reserve the watery liquid for another use), maple syrup if using, and vanilla extract into a high-speed blender or food processor.
  2. Blend the mixture until it is completely smooth and creamy. Stop and scrape down the sides as needed.
  3. Taste the mixture and add more sweetener if you prefer a sweeter popsicle. Blend again briefly.
  4. Pour the mixture evenly into popsicle molds.
  5. Insert popsicle sticks into the center of each mold.
  6. Freeze for at least 6 hours, or until completely solid.
  7. To release the popsicles, run the outside of the mold briefly under warm water.

Notes

  • For a thicker, icier texture, use light coconut milk instead of full-fat.
  • If you do not have a high-speed blender, freeze the banana slices for 30 minutes before blending to aid the process.
  • You can add 1/4 cup of shredded unsweetened coconut during the final blending stage for added texture.
