Prepare a naturally sweet and creamy bowl of stovetop oatmeal using ripe bananas for flavor and sweetness. This is a quick and wholesome breakfast.

Ingredients

Scale
  • 1 cup rolled oats
  • 2 cups water or milk (dairy or non-dairy)
  • 1 large ripe banana, mashed
  • 1/4 teaspoon ground cinnamon
  • 1 pinch salt
  • 1 teaspoon vanilla extract (optional)
  • 1 tablespoon peanut butter (optional, for topping)

Instructions

  1. Combine the rolled oats, water or milk, mashed banana, cinnamon, and salt in a small saucepan.
  2. Bring the mixture to a boil over medium-high heat, stirring occasionally.
  3. Reduce the heat to low and simmer for 5 to 7 minutes, stirring frequently until the oats absorb most of the liquid and reach your desired creamy consistency.
  4. Remove the saucepan from the heat. Stir in the vanilla extract, if using.
  5. Divide the oatmeal into bowls. Top with peanut butter, if desired, before serving immediately.

Notes

  • Use very ripe bananas for the best natural sweetness.
  • For extra creaminess, use milk instead of water, or stir in 1 tablespoon of Greek yogurt at the end.
  • This recipe makes one large serving or two smaller servings.
