Make light and fluffy banana pancakes from scratch using ripe bananas for natural sweetness and moisture.

Ingredients

Scale
  • 1 1/2 cups all-purpose flour
  • 3 1/2 teaspoons baking powder
  • 1 teaspoon salt
  • 1 tablespoon white sugar
  • 1 1/4 cups milk
  • 1 egg
  • 3 tablespoons melted butter, plus more for the griddle
  • 1 teaspoon vanilla extract
  • 1 ripe banana, mashed well

Instructions

  1. Combine the flour, baking powder, salt, and sugar in a large bowl. Mix these dry ingredients together.
  2. In a separate bowl, whisk together the milk, egg, melted butter, and vanilla extract.
  3. Pour the wet ingredients into the dry ingredients. Mix until just combined; do not overmix the batter. A few lumps are fine.
  4. Gently fold in the mashed banana.
  5. Heat a lightly oiled griddle or large non-stick pan over medium heat.
  6. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each pancake.
  7. Cook for 2 to 3 minutes per side, until golden brown and bubbles appear on the surface. Flip and cook the second side until done.
  8. Serve immediately with your preferred toppings.

Notes

  • Use very ripe bananas; the browner the peel, the sweeter the flavor.
  • For extra fluffiness, let the batter rest for 5 minutes before cooking.
  • If your pancakes stick, increase the heat slightly and add a small pat of butter to the pan before pouring the next batch.
