A recipe for a baked dessert combining creamy banana pudding layers with a soft, biscuit-style cobbler topping.

Ingredients

Scale
  • 1 cup all-purpose flour
  • 1/4 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup cold unsalted butter, cut into pieces
  • 1/2 cup milk
  • 1 (3.4 ounce) package instant vanilla pudding mix
  • 2 cups cold milk (for pudding)
  • 1 teaspoon vanilla extract
  • 2 cups sliced ripe bananas
  • 1 cup vanilla wafer cookies, crushed
  • 1/2 cup granulated sugar (for topping)
  • 1/4 cup cold unsalted butter, melted (for topping)

Instructions

  1. Preheat your oven to 375 degrees Fahrenheit. Lightly grease an 8×8 inch baking dish.
  2. Prepare the pudding: Whisk the instant vanilla pudding mix with 2 cups of cold milk and vanilla extract until thickened, about 2 minutes. Set aside.
  3. Make the cobbler topping base: In a medium bowl, whisk together the flour, 1/4 cup sugar, baking powder, and salt. Cut in the 1/2 cup cold butter pieces using a pastry blender or your fingers until the mixture resembles coarse crumbs.
  4. Stir in the 1/2 cup milk until just combined to form a soft dough. Do not overmix.
  5. Assemble the layers: Spread half of the crushed vanilla wafers in the bottom of the prepared baking dish.
  6. Layer the sliced bananas over the wafers.
  7. Spoon the prepared vanilla pudding evenly over the bananas.
  8. Drop spoonfuls of the cobbler dough over the pudding layer, spacing them out to cover most of the surface.
  9. Sprinkle the remaining 1/2 cup sugar evenly over the dough drops. Drizzle the 1/4 cup melted butter over the topping.
  10. Bake for 35 to 40 minutes, or until the topping is golden brown and the filling is bubbly.
  11. Let the cobbler cool for at least 15 minutes before serving.

Notes

  • You can use homemade custard instead of instant pudding mix for a richer flavor.
  • For a crispier topping, ensure your butter pieces are very cold when mixing the dough.
  • Reserve a few whole vanilla wafers to press into the top before baking for decoration.
