Create a simple, no-bake Banana Pudding Icebox Cake perfect for sharing. This recipe brings together creamy layers and sweet banana flavor for a delightful treat.

Ingredients

Scale
  • 1 (12 ounce) box vanilla wafer cookies
  • 3 large ripe bananas, thinly sliced
  • 1 (5.1 ounce) box instant vanilla pudding mix
  • 3 cups cold milk (whole milk recommended)
  • 1 (8 ounce) container frozen whipped topping, thawed

Instructions

  1. In a large bowl, prepare the instant vanilla pudding according to the package directions, using the cold milk. Whisk until the pudding thickens, about 2 minutes.
  2. Gently fold half of the thawed whipped topping into the prepared pudding until just combined.
  3. Arrange a single layer of vanilla wafer cookies on the bottom of a 9×13 inch baking dish.
  4. Place a layer of sliced bananas over the cookies.
  5. Spoon half of the pudding mixture evenly over the bananas.
  6. Repeat the layers: cookies, bananas, and the remaining pudding mixture.
  7. Spread the remaining whipped topping over the top layer of pudding.
  8. Cover the dish tightly with plastic wrap.
  9. Refrigerate for at least 6 hours, or preferably overnight, to allow the cookies to soften.
  10. Slice and serve your chilled icebox cake.

Notes

  • You can decorate the top with extra whipped cream or crushed vanilla wafers before serving.
  • For a richer flavor, use heavy cream and sugar to make your own whipped topping.
  • If bananas start to brown too quickly, lightly brush them with a little lemon juice before layering.
