Ingredients

Scale
  • 1 (15-ounce) can chickpeas, rinsed and drained
  • 2 tablespoons BBQ sauce (vegan)
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 2 cups cooked quinoa
  • 1 cup chopped kale
  • 1/2 cup shredded carrots
  • 1/2 cup sliced cucumber
  • 1/4 cup sliced red onion
  • 2 tablespoons vegan ranch or tahini dressing
  • 1 tablespoon toasted sesame seeds (for garnish)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a small bowl, toss the rinsed chickpeas with BBQ sauce, smoked paprika, garlic powder, and salt.
  3. Spread the seasoned chickpeas on a small baking sheet lined with parchment paper.
  4. Roast the chickpeas for 15 to 20 minutes, shaking the pan halfway through, until slightly crispy.
  5. Divide the cooked quinoa between two bowls. This is your base.
  6. Arrange the kale, shredded carrots, cucumber, and red onion neatly over the quinoa in sections.
  7. Top each bowl with half of the roasted BBQ chickpeas.
  8. Drizzle your chosen dressing over the bowls.
  9. Sprinkle with toasted sesame seeds before serving. Enjoy your delicious lunch!

Notes

  • Feel free to swap kale for spinach or use roasted sweet potatoes instead of fresh vegetables.
  • If you prefer a quicker option, you can pan-fry the seasoned chickpeas instead of roasting.
  • Adjust the amount of BBQ sauce based on your preference for sweetness and tang.
  • This bowl tastes great served warm or cold the next day.
