Make this fresh, zesty Cowboy Caviar in just 15 minutes. This no-cook dip uses black beans, corn, and fresh vegetables with a bright lime dressing, perfect for parties or as a healthy side salad.

Ingredients

Scale
  • 1 (15 ounce) can black beans, rinsed and drained
  • 1 (15 ounce) can sweet corn, drained
  • 1 cup chopped red onion
  • 1 cup chopped green bell pepper
  • 1 cup chopped red bell pepper
  • 1 cup chopped fresh or canned tomatoes (drained if canned)
  • 1/2 cup chopped fresh cilantro
  • 1/4 cup olive oil
  • 1/4 cup fresh lime juice
  • 1 teaspoon ground cumin
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon chili powder
  • Tortilla chips, for serving

Instructions

  1. Combine the rinsed black beans, drained corn, red onion, green bell pepper, red bell pepper, tomatoes, and cilantro in a large mixing bowl.
  2. In a separate small bowl, whisk together the olive oil, lime juice, cumin, salt, black pepper, and chili powder to make the dressing.
  3. Pour the dressing over the bean and vegetable mixture.
  4. Gently toss all ingredients until everything is evenly coated with the dressing.
  5. Cover the bowl and refrigerate for at least 30 minutes to allow the flavors to meld, although you can serve immediately.
  6. Serve cold or at room temperature with tortilla chips, or use it as a topping for tacos or a side salad.

Notes

  • You can prepare this dip up to 24 hours ahead of time; the flavor improves after chilling.
  • For a spicier kick, add one finely diced jalapeƱo (seeds removed) to the vegetable mix.
  • If you do not have fresh lime juice, you can substitute with bottled lime juice, but fresh is recommended for the best flavor.
