Ingredients
Scale
2 lbs Russet or Maris Piper potatoes, peeled
4 tablespoons goose fat or duck fat (or vegetable oil for vegetarian)
1 teaspoon salt
1/2 teaspoon black pepper
2 sprigs fresh rosemary
3 cloves garlic, smashed
1 tablespoon all-purpose flour (optional, for extra crispness)
Instructions
Preheat your oven to 425°F (220°C). Place the fat (goose fat or oil) in a large roasting pan and put the pan in the oven to heat up while you prepare the potatoes.
Cut the peeled potatoes into roughly equal 1.5-inch pieces.
Place the potato pieces in a large pot and cover them with cold, salted water. Bring the water to a boil and cook for 8 to 10 minutes until the edges are soft but the centers are still firm.
Drain the potatoes well in a colander. Let them sit for 5 minutes to allow excess steam to escape.
Gently shake the colander to rough up the edges of the potatoes. This creates the surface area needed for crisping. If using flour, sprinkle it over the potatoes now and toss gently.
Carefully remove the hot roasting pan from the oven. The fat should be shimmering hot. Place the potatoes into the hot fat, turning them to coat all sides.
Roast for 30 minutes.
Remove the pan from the oven. Add the rosemary sprigs and smashed garlic cloves around the potatoes. Gently turn the potatoes again.
Return the pan to the oven and roast for another 20 to 30 minutes, or until they are deep golden brown and very crispy.
Remove from the oven, season with salt and pepper, and serve immediately.
Notes
For the best results, use a starchy potato variety like Russet.
Do not overcrowd the roasting pan; give the potatoes space to roast rather than steam.
If you prefer Parmesan, sprinkle 1/4 cup of grated Parmesan cheese over the potatoes during the last 10 minutes of cooking.
