Ingredients

Scale
  • 1 medium butternut squash, peeled and cubed
  • 2 cups broccoli florets
  • 1 tablespoon olive oil
  • 1/4 cup butter
  • 1/4 cup all-purpose flour
  • 2 cups milk
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon nutmeg
  • 2 cups shredded sharp cheddar cheese
  • 1/2 cup breadcrumbs (optional, for topping)

Instructions

  1. Preheat your oven to 375°F (190°C). Lightly grease a medium baking dish.
  2. Toss the cubed squash and broccoli florets with olive oil. Spread them in a single layer on a baking sheet.
  3. Roast the vegetables for 15-20 minutes until slightly tender. Set aside.
  4. Make the cheese sauce: Melt the butter in a saucepan over medium heat.
  5. Whisk in the flour and cook for one minute, stirring constantly.
  6. Gradually whisk in the milk until the sauce thickens and simmers.
  7. Remove from heat. Stir in the salt, pepper, and nutmeg.
  8. Add the shredded cheddar cheese gradually, stirring until smooth and fully melted.
  9. Gently fold the roasted vegetables into the cheese sauce until coated.
  10. Pour the mixture into the prepared baking dish.
  11. If using, sprinkle the breadcrumbs evenly over the top.
  12. Bake for 20-25 minutes, or until bubbly and the topping is golden brown.
  13. Let it cool for a few minutes before serving.

Notes

  • You can use frozen squash and broccoli if you prefer, but thaw and drain them well first.
  • For a tangier flavor, use Gruyere cheese along with the cheddar.
  • Sasha suggests adding a pinch of cayenne pepper for a little warmth.
  • Anya suggests reserving a few small, pretty broccoli florets to arrange on top before baking for a nice look.
