Ingredients

Scale
  • 4 large baking potatoes
  • 1 tablespoon olive oil
  • 1 cup broccoli florets, chopped
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup milk
  • 2 tablespoons butter
  • Salt to taste
  • Black pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Wash the potatoes and prick them with a fork.
  3. Bake the potatoes for 50-60 minutes, or until tender.
  4. Let the potatoes cool slightly, then slice them in half lengthwise.
  5. Carefully scoop out the flesh from each potato half, leaving a thin shell.
  6. Mash the potato flesh in a bowl.
  7. In a small skillet, heat the olive oil over medium heat. Add the chopped broccoli and cook until tender-crisp, about 5 minutes.
  8. Add the mashed potato, shredded cheddar cheese, milk, butter, salt, and pepper to the bowl. Mix well until combined and creamy.
  9. Spoon the mixture back into the potato shells.
  10. Bake for another 15-20 minutes, or until the tops are golden brown and the cheese is melted and bubbly.
  11. Serve hot and enjoy your delicious stuffed potatoes!

Notes

  • For extra flavor, you can add a pinch of garlic powder or onion powder to the filling.
  • Top with a sprinkle of fresh chives or parsley before serving.
  • If you prefer a crispier shell, you can brush the inside of the potato shells with a little melted butter before filling.
