Ingredients
Scale
1 tablespoon olive oil
1 pound smoked ham, diced
1 large onion, chopped
2 carrots, sliced
2 celery stalks, sliced
4 cups shredded green cabbage
4 cups chicken or vegetable broth
1 teaspoon dried thyme
1 bay leaf
Salt and black pepper to taste
Instructions
Heat the olive oil in a large pot or Dutch oven over medium heat.
Add the diced ham and cook until lightly browned, about 5 minutes.
Add the onion, carrots, and celery to the pot. Cook until the vegetables soften, about 7 minutes.
Stir in the shredded cabbage, broth, thyme, and bay leaf.
Bring the stew to a boil, then reduce the heat to low.
Cover and simmer for 30 to 40 minutes, or until the cabbage is tender.
Remove the bay leaf. Season with salt and pepper to your liking.
Serve hot and enjoy the warmth!
Notes
You can substitute smoked sausage for the ham if you prefer a different flavor profile.
For a richer broth, use ham hock instead of diced ham, removing the bone before serving.
A small dash of apple cider vinegar added at the end brightens the flavor of the cabbage.
