Ingredients
Scale
1/2 cup rolled oats
1 cup milk (dairy or non-dairy)
1 tablespoon chia seeds
1 teaspoon vanilla extract
1/4 teaspoon peppermint extract
1 tablespoon maple syrup (or sweetener of choice)
1 drop red food coloring (optional, for color)
1/4 cup crushed peppermint candies or candy canes
2 tablespoons plain Greek yogurt (optional, for extra creaminess)
Instructions
In a jar or container, combine the rolled oats, milk, chia seeds, vanilla extract, peppermint extract, maple syrup, and food coloring if using.
Stir well until all ingredients are mixed evenly.
Cover the container and place it in the refrigerator for at least 6 hours, or preferably overnight.
In the morning, stir the oats. If the mixture is too thick, add a splash more milk.
Stir in the Greek yogurt, if using.
Top with the crushed peppermint candies just before serving.
Notes
You can substitute almond or soy milk for regular milk.
Adjust the amount of peppermint extract to your taste preference. Start small.
Crush your candy canes in a plastic bag using a rolling pin for easy topping.
For a sweeter oat, add a little more maple syrup before chilling.
