Ingredients

Scale
  • 2 cups mascarpone cheese
  • 3/4 cup granulated sugar
  • 3 large eggs, separated
  • 1 teaspoon vanilla extract
  • 1 1/2 cups strong brewed coffee, cooled
  • 24 ladyfingers
  • Unsweetened cocoa powder, for dusting

Instructions

  1. In a bowl, beat the mascarpone cheese and granulated sugar until smooth.
  2. Beat in the egg yolks one at a time until well combined.
  3. Stir in the vanilla extract.
  4. In a separate clean bowl, beat the egg whites until stiff peaks form.
  5. Gently fold the beaten egg whites into the mascarpone mixture until just combined.
  6. Quickly dip each ladyfinger into the cooled coffee, ensuring they are moistened but not soggy.
  7. Arrange a layer of dipped ladyfingers at the bottom of each serving cup.
  8. Spoon a layer of the mascarpone cream over the ladyfingers.
  9. Repeat the layers, ending with a layer of mascarpone cream.
  10. Cover the cups and refrigerate for at least 4 hours, or until firm.
  11. Before serving, dust the tops generously with unsweetened cocoa powder.

Notes

  • For a stronger coffee flavor, use espresso.
  • Ensure the coffee is completely cooled before dipping the ladyfingers to prevent them from becoming too soft.
  • You can prepare these cups a day in advance.
