Ingredients

Scale
  • 1 cup all-purpose flour
  • 1/2 cup packed light brown sugar
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1/2 cup (1 stick) unsalted butter, melted
  • 2 (8-ounce) packages cream cheese, softened
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/4 cup caramel sauce, plus more for drizzling
  • 2 medium apples, peeled, cored, and diced
  • 1/4 teaspoon ground nutmeg

Instructions

  1. Preheat your oven to 350°F (175°C). Line an 8×8 inch baking pan with parchment paper, leaving an overhang on the sides.
  2. In a medium bowl, combine the flour, brown sugar, cinnamon, and salt. Pour in the melted butter and stir until the mixture resembles coarse crumbs. Press this mixture evenly into the bottom of the prepared baking pan.
  3. Bake the crust for 10-12 minutes, until lightly golden. Remove from oven and let cool slightly.
  4. In a large bowl, beat the softened cream cheese and granulated sugar until smooth and creamy.
  5. Beat in the eggs one at a time, then stir in the vanilla extract.
  6. In a separate small bowl, combine the diced apples, 1/4 cup caramel sauce, and nutmeg.
  7. Spread half of the cream cheese mixture evenly over the baked crust.
  8. Spoon the apple mixture over the cream cheese layer.
  9. Carefully spoon the remaining cream cheese mixture over the apples, spreading gently to cover them.
  10. Bake for 30-35 minutes, or until the edges are set and the center is almost set.
  11. Let the bars cool completely in the pan on a wire rack.
  12. Once cooled, drizzle with additional caramel sauce before cutting into bars.

Notes

  • For a richer caramel flavor, use a good quality caramel sauce.
  • You can use a mix of apple varieties for a more complex flavor.
  • Ensure your cream cheese is fully softened to avoid lumps in the cheesecake filling.
