Create a comforting fusion meal with these Carbonara Ramen Bowls. This recipe blends the creamy richness of Italian Carbonara with the satisfying texture of ramen noodles for a truly special dinner.
1/4 cup grated Parmesan cheese plus extra for topping
2 ounces guanciale or pancetta, diced
1 clove garlic, minced
1/4 cup reserved hot pasta water (or ramen broth)
Freshly ground black pepper to taste
Instructions
Cook the ramen noodles according to package directions until just tender. Reserve about 1/2 cup of the hot cooking water before draining.
While the noodles cook, cook the diced guanciale or pancetta in a small skillet over medium heat until crisp. Add the minced garlic during the last minute until fragrant. Remove the skillet from the heat.
In a small bowl, whisk together the egg yolks and Parmesan cheese until smooth.
Quickly add the drained, hot ramen noodles to the skillet with the rendered fat and meat. Toss to coat.
Remove the skillet completely from the heat source. Slowly pour in the egg and cheese mixture while tossing the noodles vigorously.
Gradually add the reserved hot cooking water, a tablespoon at a time, tossing constantly until a creamy sauce forms that coats the noodles. Do not let the eggs scramble.
Season generously with freshly ground black pepper.
Divide the ramen into bowls. Top with extra Parmesan cheese and more black pepper before serving immediately.
Notes
If the sauce seems too thick, add another splash of hot reserved water.
Use high-quality Parmesan for the best flavor.
Be careful not to scramble the eggs; the residual heat from the noodles and water is what cooks the sauce.
