Make this low-carb version of Mexican street corn using roasted cauliflower florets topped with a creamy, spicy lime sauce and Cotija cheese.

Ingredients

Scale
  • 1 large head cauliflower, cut into bite-sized florets
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup mayonnaise or Mexican crema
  • 1/4 cup sour cream
  • 2 tablespoons fresh lime juice
  • 1 teaspoon chili powder (like ancho or regular)
  • 1/2 cup Cotija cheese, crumbled (or Feta as a substitute)
  • 2 tablespoons fresh cilantro, chopped
  • Tajin seasoning, for dusting

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Toss the cauliflower florets with olive oil, salt, and pepper on the baking sheet.
  3. Roast for 20 to 25 minutes, tossing halfway, until the cauliflower is tender and slightly browned at the edges.
  4. While the cauliflower roasts, prepare the sauce. In a small bowl, whisk together the mayonnaise (or crema), sour cream, lime juice, and chili powder until smooth.
  5. Remove the roasted cauliflower from the oven and transfer it to a large bowl.
  6. Pour the sauce over the warm cauliflower and gently toss to coat all the pieces evenly.
  7. Transfer the coated cauliflower to a serving platter.
  8. Sprinkle generously with the crumbled Cotija cheese and chopped cilantro.
  9. Dust the entire dish with Tajin seasoning before serving immediately.

Notes

  • For a smoky flavor, grill the cauliflower florets over medium heat until tender and charred in spots.
  • To make this recipe vegan, substitute the mayonnaise/crema with a vegan mayonnaise and use a plant-based feta alternative or nutritional yeast mixed with salt for the cheese topping.
  • If you prefer a spicier sauce, add 1/4 teaspoon of cayenne pepper to the mixture.
