Ingredients
Scale
4 cups cauliflower rice (fresh or frozen)
1 tablespoon avocado oil or sesame oil
1 small onion, diced
2 cloves garlic, minced
1 cup mixed vegetables (peas, carrots, diced bell pepper)
2 large eggs, lightly beaten
3 tablespoons low-sodium soy sauce or tamari
1 teaspoon toasted sesame oil
1/2 teaspoon ground ginger
1/4 teaspoon white pepper
2 green onions, sliced (for garnish)
Instructions
If using fresh cauliflower, pulse florets in a food processor until they resemble rice grains. If using frozen, thaw slightly and squeeze out excess moisture using a clean kitchen towel. This step is key for non-soggy rice.
Heat the avocado or sesame oil in a large skillet or wok over medium-high heat. Add the diced onion and cook for 2 minutes until softened.
Add the minced garlic and mixed vegetables. Stir fry for 3 minutes until vegetables are tender-crisp.
Push the vegetables to one side of the pan. Pour the beaten eggs onto the empty side. Scramble the eggs quickly until just set, then mix them into the vegetables.
Add the prepared cauliflower rice to the pan. Spread it out evenly and let it cook without stirring for 2-3 minutes to allow some moisture to evaporate. This helps achieve a better texture.
Stir the cauliflower rice, mixing it well with the egg and vegetables. Cook for another 5 minutes, stirring occasionally.
Pour the soy sauce, toasted sesame oil, ground ginger, and white pepper over the mixture. Stir constantly for 1-2 minutes until everything is evenly coated and heated through.
Remove from heat. Garnish with sliced green onions before serving immediately.
Notes
For a protein boost, add 1 cup of cooked, diced chicken or shrimp during Step 4.
Use tamari instead of soy sauce for a gluten-free version.
Do not overcrowd the pan; cook in batches if necessary to maintain high heat and prevent steaming.
