Learn how to achieve a perfect charred, smoky flavor on your Mexican street corn using simple techniques like direct flame or your broiler. This recipe celebrates the vibrant tastes of elote with a delicious smoky finish.

Ingredients

Scale
  • 4 ears of corn, husked and cleaned
  • 2 tablespoons olive oil
  • Salt to taste
  • Black pepper to taste
  • Optional toppings: mayonnaise, crumbled cotija cheese, lime wedges, chili powder, cilantro

Instructions

  1. Prepare your corn: You can grill the corn directly over a flame or under your broiler.
  2. For direct flame grilling: Preheat your grill to medium-high heat. Place the corn directly on the grill grates. Turn the corn frequently until it’s tender and has nice charred spots all over. This usually takes about 10-15 minutes.
  3. For broiler method: Preheat your broiler. Place the corn on a baking sheet lined with foil. Position the baking sheet about 4-6 inches from the broiler element. Broil for 5-7 minutes per side, turning the corn every few minutes, until tender and charred. Watch closely to prevent burning.
  4. Once charred, remove the corn from the heat. Brush lightly with olive oil and season with salt and pepper while still warm.
  5. Serve immediately with your favorite toppings or as is.

Notes

  • Ensure your corn is cooked through and tender before charring.
  • Keep a close eye on the corn when charring to avoid burning.
  • Experiment with different toppings to find your favorite combination.
