Make simple, creamy, individual cheesecake bites without baking. These are perfect for parties and gatherings.

Ingredients

Scale
  • 8 oz cream cheese, softened
  • 1/2 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1/4 cup heavy cream
  • 1 cup graham cracker crumbs
  • 3 tablespoons melted butter
  • Optional topping: Strawberry preserves or chocolate chips

Instructions

  1. Combine graham cracker crumbs and melted butter in a small bowl. Press mixture firmly into the bottom of a mini muffin tin lined with paper liners.
  2. In a separate bowl, beat the softened cream cheese, sugar, and vanilla extract until smooth.
  3. In a third bowl, whip the heavy cream until soft peaks form. Gently fold the whipped cream into the cream cheese mixture.
  4. Spoon or pipe the cheesecake filling over the crusts in the muffin tin.
  5. Refrigerate for at least 2 hours, or until firm.
  6. Top each bite with strawberry preserves or chocolate chips before serving.

Notes

  • For a firmer crust, chill the crust mixture for 10 minutes before adding the filling.
  • You can use vanilla wafers or shortbread cookies for the crust instead of graham crackers.
  • If you do not have a mini muffin tin, you can use small paper cups placed on a baking sheet.
