Ingredients
Scale
1 cup (2 sticks) unsalted butter, melted
2 cups granulated sugar
4 large eggs
1 teaspoon vanilla extract
1 cup all-purpose flour
3/4 cup unsweetened cocoa powder
1/2 teaspoon salt
1 (8 ounce) package cream cheese, softened
1/4 cup granulated sugar
1 large egg
1/2 teaspoon vanilla extract
Instructions
Preheat your oven to 350°F (175°C). Line a 9×13 inch baking pan with parchment paper, leaving an overhang for easy removal.
Prepare the brownie batter: In a large bowl, mix the melted butter and 2 cups of sugar until combined. Beat in the 4 eggs one at a time, then stir in 1 teaspoon of vanilla.
In a separate bowl, whisk together the flour, cocoa powder, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix. Spread the brownie batter evenly into the prepared pan.
Prepare the cheesecake layer: In a medium bowl, beat the softened cream cheese with 1/4 cup of sugar until smooth. Beat in the remaining egg and 1/2 teaspoon of vanilla extract until the mixture is creamy.
Pour the cream cheese mixture over the brownie batter.
Create the swirl: Use a butter knife or a skewer to gently swirl the cheesecake layer into the brownie batter. Make figure-eight motions without cutting all the way to the bottom of the pan.
Bake for 30 to 35 minutes, or until the edges are set and a toothpick inserted near the edge comes out with moist crumbs, but not wet batter. The center should still look slightly soft.
Let the Cheesecake Brownies cool completely in the pan on a wire rack before lifting out using the parchment overhang. Cut into squares.
Notes
For a cleaner swirl pattern, chill the cream cheese mixture slightly before layering it over the batter.
Do not overbake; overbaking causes the cheesecake layer to dry out and crack.
For extra flavor, add 1/2 cup of chocolate chips to the brownie batter.
