Create incredibly satisfying Cheesy Bacon Twice-Baked Potatoes. This recipe delivers a creamy, cheesy interior loaded with savory bacon, perfect for a comforting meal.

Ingredients

Scale
  • 4 large Russet potatoes
  • 1 tablespoon olive oil
  • 1/2 cup milk
  • 1/4 cup butter, softened
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup shredded sharp cheddar cheese, divided
  • 1/2 cup cooked, crumbled bacon
  • 2 green onions, sliced (for garnish)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Prick the potatoes several times with a fork. Rub them lightly with olive oil.
  3. Bake the potatoes directly on the oven rack for 50 to 60 minutes, or until the skins are crisp and the insides are tender.
  4. Remove the potatoes from the oven and let them cool slightly until you can handle them.
  5. Slice each potato in half lengthwise. Scoop out the flesh into a bowl, leaving about a 1/4-inch shell.
  6. Add the milk, butter, salt, and pepper to the potato flesh. Mash until smooth.
  7. Stir in 3/4 cup of the cheddar cheese and all of the crumbled bacon into the mashed mixture. Mix well.
  8. Spoon the potato mixture evenly back into the potato shells, mounding it slightly.
  9. Place the stuffed potatoes on a baking sheet.
  10. Bake for an additional 15 minutes, or until heated through.
  11. Top with the remaining 1/4 cup of cheddar cheese. Bake for 5 more minutes until the cheese melts.
  12. Garnish with sliced green onions before serving.

Notes

  • For extra crispy skins, rub the outside of the potatoes with a little coarse salt before baking.
  • You can use any type of cooked bacon you prefer, such as turkey bacon.
  • Feel free to add a dash of garlic powder or a sprinkle of smoked paprika for extra flavor in the filling.
