Ingredients
Scale
4 tablespoons butter
1 medium yellow onion, chopped
2 cloves garlic, minced
1/4 cup all-purpose flour
4 cups chicken or vegetable broth
2 cups dill pickle juice (from jar)
1 cup dill pickle slices, drained and chopped
1/2 teaspoon dried dill weed
1/4 teaspoon black pepper
1/4 teaspoon paprika
8 ounces cream cheese, cubed
1 cup shredded cheddar cheese
1/2 cup heavy cream
Fresh dill, for garnish
Instructions
Melt the butter in a large pot or Dutch oven over medium heat.
Add the chopped onion and cook until softened, about 5 minutes.
Stir in the minced garlic and cook for 1 minute more until fragrant.
Whisk in the flour and cook for 1 minute, stirring constantly to form a roux.
Gradually whisk in the broth and pickle juice until smooth.
Bring the mixture to a simmer, stirring occasionally.
Stir in the chopped pickles, dried dill weed, black pepper, and paprika.
Reduce heat to low. Add the cream cheese cubes, stirring until completely melted and the soup is smooth.
Stir in the cheddar cheese until melted.
Pour in the heavy cream and heat through gently; do not boil.
Taste and adjust seasonings if needed.
Ladle the soup into bowls and garnish generously with fresh dill before serving.
Notes
Sasha suggests tasting the pickle juice first; if it is very salty, reduce the added salt or pepper.
If you like more tang, add a splash more pickle juice at the end.
This soup thickens as it cools, so you may need to add a little extra broth or cream when reheating leftovers.
