Ingredients
Scale
10.5 ounce can condensed cream of chicken soup
1 cup sour cream
1/2 cup butter, melted
1/4 cup chopped onion (optional)
2 cups shredded cheddar cheese
1/4 cup grated Parmesan cheese
1 teaspoon salt
1/2 teaspoon black pepper
2 pounds frozen hash brown potatoes, thawed
1/2 cup crushed cornflakes (optional, for topping)
2 tablespoons melted butter (optional, for topping)
Instructions
Preheat your oven to 350 degrees F (175 degrees C).
In a large bowl, combine the condensed cream of chicken soup, sour cream, and 1/2 cup melted butter.
Stir in the chopped onion (if using), shredded cheddar cheese, Parmesan cheese, salt, and pepper.
Add the thawed hash brown potatoes to the mixture and stir until everything is well combined.
Pour the potato mixture into a greased 9×13 inch baking dish.
If using a topping, mix the crushed cornflakes with 2 tablespoons of melted butter and sprinkle evenly over the casserole.
Bake for 45-60 minutes, or until the casserole is hot, bubbly, and lightly golden brown on top.
Let it rest for a few minutes before serving.
Notes
For an extra cheesy flavor, you can stir in an additional 1/2 cup of cheddar cheese.
If you don’t have cream of chicken soup, cream of mushroom soup can be substituted.
The cornflake topping adds a nice crunch, but it’s delicious without it too.
