Ingredients
Scale
1 pre-made graham cracker crust (9-inch)
1 (8 ounce) package cream cheese, softened
1/2 cup powdered sugar
1 teaspoon vanilla extract
1 (12 ounce) can evaporated milk, chilled overnight
1 (10 ounce) jar maraschino cherries, drained (reserve 1/4 cup syrup)
In a large bowl, beat the softened cream cheese, powdered sugar, and vanilla extract until smooth.
In a separate, chilled bowl, whip the chilled evaporated milk until soft peaks form. Gently fold the whipped evaporated milk into the cream cheese mixture.
Stir the reserved 1/4 cup of cherry syrup and a drop of red food coloring (if using) into the cream cheese mixture.
Gently fold in the drained maraschino cherries.
In a clean bowl, whip the heavy cream until stiff peaks form. Gently fold the whipped cream into the cherry mixture.
Slowly pour the chilled cherry soda into the pie filling, mixing just until combined. Work quickly so the mixture stays light and airy.
Pour the filling into the graham cracker crust.
Refrigerate the pie for at least 6 hours, or until firm.
Before serving, top with whipped topping and extra cherries, if desired.
Notes
Make sure your evaporated milk is very cold; chilling it overnight helps it whip properly.
Do not overmix when adding the soda; you want to keep the airiness in the filling.
This pie is best made the day before serving to allow it to set completely.
