You will make wonderfully fudgy and chewy chocolate oat bars. These bars are simple to prepare and deliver a satisfying chocolate punch in every bite.

Ingredients

Scale
  • 1 cup all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup (2 sticks) unsalted butter, softened
  • 3/4 cup packed light brown sugar
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 3 cups rolled oats (not instant)
  • 1 cup semi-sweet chocolate chips
  • 1/2 cup chopped nuts (optional)

Instructions

  1. Preheat your oven to 350 degrees F (175 degrees C). Line a 9×13 inch baking pan with parchment paper, leaving an overhang for easy removal.
  2. In a medium bowl, whisk together the flour, baking soda, and salt. Set this mixture aside.
  3. In a large bowl, beat the softened butter, brown sugar, and granulated sugar together until the mixture is light and fluffy.
  4. Beat in the eggs one at a time, then stir in the vanilla extract.
  5. Gradually add the dry ingredients to the wet ingredients, mixing just until combined. Do not overmix.
  6. Stir in the rolled oats, chocolate chips, and chopped nuts (if using). The dough will be thick.
  7. Press the dough evenly into the prepared baking pan. Pack it down firmly.
  8. Bake for 20 to 25 minutes, or until the edges are lightly golden brown. The center should still look slightly soft.
  9. Let the bars cool completely in the pan on a wire rack. This is key for chewy texture.
  10. Once cool, use the parchment overhang to lift the bars out of the pan. Cut into squares.

Notes

  • For extra fudginess, use a mix of milk and dark chocolate chips.
  • Do not overbake; slightly underbaking results in a chewier bar.
  • Cooling completely before cutting prevents the bars from crumbling.
  • You can substitute butter with coconut oil for a slightly different flavor profile.
