Enjoy these wonderfully chewy Salted Pecan Pie Bars. They capture all the rich, gooey flavor of traditional pecan pie but in an easy-to-handle bar form. Anya brings her grandmother’s touch to this classic treat.

Ingredients

Scale
  • 1 cup (2 sticks) unsalted butter, softened
  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 cup packed light brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 1/2 cups light corn syrup
  • 1/2 cup granulated sugar
  • 3 large eggs, lightly beaten
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 2 cups pecan halves, toasted
  • Flaky sea salt for sprinkling

Instructions

  1. Preheat your oven to 350°F (175°C). Line a 9×13 inch baking pan with parchment paper, leaving an overhang on the sides for easy removal.
  2. Make the crust: In a medium bowl, combine the softened butter, flour, brown sugar, 1 large egg, and 1 teaspoon of vanilla extract. Mix until a soft dough forms.
  3. Press the dough evenly into the bottom of the prepared baking pan. Bake the crust for 15 minutes until lightly golden.
  4. While the crust bakes, prepare the filling: In a separate large bowl, whisk together the corn syrup, granulated sugar, 3 lightly beaten eggs, 1 teaspoon of vanilla extract, and 1/4 teaspoon of salt until well combined.
  5. Gently stir in the toasted pecan halves.
  6. Pour the pecan filling evenly over the warm, pre-baked crust.
  7. Sprinkle the top generously with flaky sea salt.
  8. Return the pan to the oven and bake for 30 to 35 minutes, or until the filling is set and the edges are bubbly.
  9. Let the bars cool completely in the pan on a wire rack before lifting them out using the parchment paper overhang.
  10. Once cool, cut into squares or bars. Enjoy your chewy treat!

Notes

  • To toast pecans quickly, spread them on a baking sheet and bake for about 8 minutes at 350°F (175°C), watching closely so they do not burn.
  • For the chewiest texture, do not overbake the filling. It should still look slightly soft in the center when you remove it from the oven.
  • Anya suggests using high-quality vanilla extract for the best flavor in the filling.
