Ingredients

Scale
  • 1.5 lbs ground chicken
  • 1 cup Panko breadcrumbs
  • 1/2 cup grated Parmesan cheese, plus more for topping
  • 1/4 cup milk
  • 1 large egg, lightly beaten
  • 2 cloves garlic, minced
  • 1/4 cup finely chopped fresh parsley
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon olive oil
  • 24 oz marinara sauce
  • 1/2 cup shredded mozzarella cheese

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a large bowl, combine the Panko breadcrumbs and milk. Let stand for 5 minutes to soften the breadcrumbs.
  3. Add the ground chicken, 1/2 cup Parmesan cheese, egg, minced garlic, parsley, oregano, salt, and pepper to the breadcrumb mixture.
  4. Mix gently with your hands until just combined. Do not overmix.
  5. Roll the mixture into about 1.5-inch balls. You should have around 18-20 meatballs.
  6. Heat the olive oil in a large oven-safe skillet over medium heat. Brown the meatballs on all sides, working in batches if needed. This takes about 5-7 minutes.
  7. Pour the marinara sauce over the browned meatballs in the skillet.
  8. Bake for 15 minutes, or until the meatballs are cooked through.
  9. Remove from the oven. Sprinkle the mozzarella and remaining Parmesan cheese over the top.
  10. Return to the oven for 3-5 minutes, or until the cheese is melted and bubbly.
  11. Serve immediately.

Notes

  • You can bake the meatballs without browning them first for an even easier cleanup.
  • Feel free to add a pinch of red pepper flakes to the meatball mixture for a little heat.
  • These meatballs freeze well after baking. Cool completely, then store in an airtight container.
