Ingredients

Scale
  • 4 boneless, skinless chicken breasts
  • 1 cup all-purpose flour
  • 2 large eggs, beaten
  • 1 cup breadcrumbs (Panko recommended)
  • 1/2 cup grated Parmesan cheese, plus more for topping
  • 1 teaspoon dried oregano
  • 1/2 teaspoon garlic powder
  • Salt and black pepper to taste
  • 2 tablespoons olive oil
  • 1 cup marinara sauce
  • 2 cups fresh spinach, roughly chopped
  • 4 slices mozzarella cheese
  • Fresh basil for garnish (optional)

Instructions

  1. Place chicken breasts between two sheets of plastic wrap. Pound them to an even 1/2-inch thickness.
  2. Set up a breading station: Place flour in one shallow dish. Whisk eggs in a second dish. Mix breadcrumbs, 1/2 cup Parmesan, oregano, and garlic powder in a third dish.
  3. Season chicken lightly with salt and pepper. Dredge each piece in flour, shaking off excess. Dip into the egg mixture, letting excess drip off. Coat thoroughly in the breadcrumb mixture, pressing gently so it adheres.
  4. Heat olive oil in a large skillet over medium-high heat. Cook chicken for 4-5 minutes per side until golden brown and cooked through.
  5. Preheat your broiler. Place cooked chicken in an oven-safe dish. Top each piece with marinara sauce, then a layer of chopped spinach.
  6. Place one slice of mozzarella cheese on top of the spinach. Sprinkle with extra Parmesan cheese.
  7. Broil for 2-3 minutes, watching closely, until the cheese is melted and bubbly.
  8. Remove from the oven. Garnish with fresh basil if desired. Serve immediately.

Notes

  • Sasha suggests using Panko breadcrumbs for the best crunch.
  • Feel free to add a pinch of red pepper flakes to the breadcrumb mix if you like a little heat.
  • You can make the marinara sauce ahead of time to save time.
