Make a comforting chicken pot pie flavor in an easy casserole format using canned biscuits for a quick weeknight dinner.

Ingredients

Scale
  • 2 cups cooked, shredded chicken (rotisserie chicken works well)
  • 1 tablespoon olive oil
  • 1 cup chopped carrots
  • 1 cup chopped celery
  • 1 cup frozen peas
  • 1/2 cup chopped yellow onion
  • 1/2 cup all-purpose flour
  • 2 cups chicken broth
  • 1 cup milk
  • 1 teaspoon dried thyme
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon salt
  • 1 (10.5 ounce) can cream of chicken soup, undiluted
  • 1 cup shredded cheddar cheese (optional)
  • 1 (16.3 ounce) can refrigerated biscuit dough

Instructions

  1. Preheat your oven to 375 degrees Fahrenheit. Lightly grease a 9×13 inch baking dish.
  2. Heat the olive oil in a large skillet over medium heat. Add the carrots, celery, and onion. Cook until the vegetables soften, about 5 to 7 minutes.
  3. Stir in the flour, thyme, salt, and pepper. Cook for 1 minute, stirring constantly.
  4. Gradually whisk in the chicken broth and milk until the mixture thickens slightly.
  5. Stir in the cream of chicken soup and the shredded chicken. Cook until heated through. Remove the skillet from the heat.
  6. If using cheese, stir half of the cheddar cheese into the filling mixture. Add the frozen peas. Pour the filling into the prepared baking dish.
  7. Separate the biscuit dough and arrange the biscuits evenly over the top of the filling.
  8. Bake for 20 to 25 minutes, or until the biscuits are golden brown and cooked through.
  9. Sprinkle the remaining cheddar cheese over the hot biscuits immediately after removing the casserole from the oven. Let it cool for 5 minutes before serving.

Notes

  • For richer flavor, substitute half of the milk with heavy cream.
  • You can use any cooked poultry, such as turkey, in place of chicken.
  • If you prefer a crispier topping, brush the tops of the biscuits lightly with melted butter before baking.
