Make a silky smooth, rich chocolate buttercream frosting that pipes well and tastes better than store-bought options. This recipe yields a fluffy, decadent topping for cakes and cupcakes.

Ingredients

Scale
  • 1 cup unsalted butter, softened
  • 3 1/2 cups powdered sugar, sifted
  • 1/2 cup unsweetened cocoa powder, sifted
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 3 to 5 tablespoons heavy cream or milk

Instructions

  1. Beat the softened butter in a large bowl with an electric mixer until it is light and creamy, about 2 minutes.
  2. Gradually add the sifted powdered sugar and sifted cocoa powder to the butter, mixing on low speed until just combined.
  3. Add the vanilla extract and salt. Increase the mixer speed to medium and beat for 1 minute.
  4. Add 3 tablespoons of heavy cream or milk. Beat on medium-high speed for 3 to 5 minutes until the frosting is light and fluffy.
  5. If the frosting seems too thick, add the remaining cream one tablespoon at a time until you reach your desired smooth consistency.
  6. Beat for one final minute on medium speed to incorporate air for a silky texture.

Notes

  • For the richest flavor, use high-quality cocoa powder.
  • If the frosting seems grainy, beat it longer; the friction helps dissolve the sugar crystals.
  • To make this frosting pipeable for detailed work, use slightly less cream.
  • If the butter is too warm, the frosting will be greasy; chill briefly if necessary.
