Make bakery-style chocolate chip vanilla custard brioches using a rich brioche dough and homemade pastry cream filling.

Ingredients

Scale
  • 500g bread flour
  • 60g granulated sugar
  • 10g salt
  • 10g instant dry yeast
  • 3 large eggs, room temperature
  • 150g unsalted butter, softened and cubed
  • 100g milk, lukewarm
  • 150g vanilla pastry cream (custard)
  • 100g semi-sweet chocolate chips
  • 1 egg, beaten (for egg wash)

Instructions

  1. Make the brioche dough: Combine flour, sugar, salt, and yeast in a stand mixer bowl. Add eggs and milk. Mix on low speed until a shaggy dough forms.
  2. Knead the dough for 5 minutes. Gradually add the softened butter, one cube at a time, waiting until each piece is incorporated before adding the next. Continue kneading for 10-15 minutes until the dough is smooth and passes the windowpane test.
  3. Place the dough in a lightly oiled bowl, cover, and let it rise in a warm place until doubled, about 2 to 3 hours.
  4. Punch down the risen dough. Divide it into 8 equal pieces. Roll each piece into a smooth ball.
  5. Flatten each ball slightly. Place a spoonful of vanilla pastry cream in the center of each piece, sprinkle with chocolate chips, and gently fold the edges up and over to seal the filling inside, forming a tight ball.
  6. Place the filled balls on a parchment-lined baking sheet, leaving space between them. Cover loosely and let them proof for 45 to 60 minutes, or until puffy.
  7. Preheat your oven to 375°F (190°C). Brush the tops of the proofed brioches lightly with the beaten egg wash.
  8. Bake for 18 to 22 minutes, or until golden brown.
  9. Cool on a wire rack before serving.

Notes

  • For the best texture, ensure your butter is truly soft but not melted when adding it to the dough.
  • You can prepare the vanilla pastry cream one day ahead and chill it completely before filling the brioches.
  • If your kitchen is cold, place the dough in the oven with just the light on for proofing.
