Ingredients
Scale
2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon baking powder
1/2 teaspoon salt
1 teaspoon ground cinnamon
1/2 cup unsalted butter, softened
1 cup granulated sugar
1/2 cup packed brown sugar
2 large eggs
1 teaspoon vanilla extract
2 cups grated zucchini, squeezed dry
1 cup semi-sweet chocolate chips
Instructions
Preheat your oven to 350°F (175°C). Grease and flour a 9×5 inch loaf pan.
Whisk together the flour, baking soda, baking powder, salt, and cinnamon in a medium bowl. Set this aside.
In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
Beat in the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
Gradually add the dry ingredients to the wet ingredients, mixing just until combined. Do not overmix.
Gently fold in the squeezed, grated zucchini and the chocolate chips.
Pour the batter into the prepared loaf pan.
Bake for 50 to 60 minutes, or until a toothpick inserted into the center comes out clean.
Let the bread cool in the pan for 10 minutes before turning it out onto a wire rack to cool completely.
Notes
Remember to squeeze excess moisture from the grated zucchini; this keeps your bread from becoming soggy.
You can substitute half the chocolate chips with white chocolate or chopped nuts if you prefer.
Anya suggests adding a pinch of nutmeg for extra warmth.
This bread freezes well. Wrap tightly before freezing.
