Indulge in this rich and creamy Chocolate Espresso Pot de Crème. It’s a decadent custard dessert that perfectly balances deep dark chocolate with a hint of bold espresso.

Ingredients

Scale
  • 1 1/2 cups heavy cream
  • 1/2 cup whole milk
  • 3 tablespoons granulated sugar
  • 1/4 teaspoon salt
  • 4 large egg yolks
  • 4 ounces bittersweet or semisweet chocolate, finely chopped
  • 1 tablespoon instant espresso powder
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 325°F (160°C).
  2. Arrange four 4-ounce ramekins in a baking dish.
  3. In a medium saucepan, combine the heavy cream, milk, sugar, and salt. Heat over medium heat until it just begins to simmer. Do not boil.
  4. In a separate bowl, whisk together the egg yolks.
  5. Slowly temper the egg yolks by gradually whisking about half of the hot cream mixture into the yolks.
  6. Pour the tempered egg yolk mixture back into the saucepan with the remaining cream.
  7. Add the finely chopped chocolate and instant espresso powder to the saucepan. Whisk gently until the chocolate is completely melted and the mixture is smooth.
  8. Stir in the vanilla extract.
  9. Strain the custard mixture through a fine-mesh sieve into a pitcher or bowl with a spout. This ensures a silky smooth texture.
  10. Carefully pour the custard evenly into the prepared ramekins.
  11. Pour hot water into the baking dish around the ramekins, creating a water bath. The water should come about halfway up the sides of the ramekins.
  12. Bake for 30-35 minutes, or until the edges are set but the centers are still slightly jiggly.
  13. Carefully remove the ramekins from the water bath and let them cool on a wire rack.
  14. Chill the pots de crème in the refrigerator for at least 2 hours, or until firm.
  15. Serve chilled.

Notes

  • For an extra touch of elegance, you can garnish with a dollop of whipped cream or a sprinkle of cocoa powder before serving.
  • If you don’t have instant espresso powder, you can dissolve 1 tablespoon of finely ground espresso beans in 1 tablespoon of hot water, then strain to remove the grounds before adding to the custard.
