Make this gooey cinnamon breakfast casserole the night before for a simple, warm brunch bake ready when you wake up.

Ingredients

Scale
  • 1 (12.4 ounce) package refrigerated cinnamon rolls with icing
  • 4 large eggs
  • 1 cup milk
  • 1 teaspoon vanilla extract
  • 1/4 cup granulated sugar
  • 1/4 teaspoon ground cinnamon
  • 1 tablespoon butter, melted

Instructions

  1. Lightly grease a 9×13 inch baking dish.
  2. Open the refrigerated cinnamon roll package. Place the rolls into the prepared baking dish, separating them slightly.
  3. In a medium bowl, whisk together the eggs, milk, vanilla extract, granulated sugar, and ground cinnamon until fully combined. This creates your custard base.
  4. Slowly pour the egg mixture evenly over the cinnamon rolls in the baking dish. Make sure the liquid seeps down between the rolls.
  5. Cover the baking dish tightly with plastic wrap. Refrigerate for at least 4 hours, or preferably overnight.
  6. When ready to bake, preheat your oven to 350 degrees F. Remove the plastic wrap from the dish.
  7. Brush the tops of the rolls lightly with the melted butter.
  8. Bake for 30 to 35 minutes, or until the casserole is set and lightly golden brown. If the top browns too quickly, loosely cover it with foil for the last 10 minutes.
  9. Remove from the oven and let it cool for 5 minutes. Drizzle the icing that came with the rolls over the warm casserole.
  10. Slice and serve this easy brunch bake warm.

Notes

  • For a slow-cooker cinnamon rolls version, assemble everything as directed, but place the covered dish in the slow cooker. Cook on low for 3 to 4 hours.
  • If you want extra gooey cinnamon breakfast results, reserve half of the icing packet and warm it slightly before drizzling.
  • This recipe uses canned dough, making it a simple 5 ingredient cinnamon casserole base before adding the custard.
